This Kiritsuke Petit is built around Ginsan (Silver #3) stainless steel: the rare middle ground between carbon sharpness and stainless practicality. It sharpens easily, holds a refined edge and never demands the obsessive maintenance of carbon steel. The Hontanren forging method aligns the grain structure of the steel by hand — the difference shows in how the blade cuts, not just how it looks.
At 130mm, the kiritsuke tip and flat profile make this the knife you reach for when precision matters — herbs, garnishes, trimming, fine work. Light at 93g, balanced in an octagonal rosewood handle that locks into your grip and lets you rotate the blade without thinking.
