Forged by Jikko Cutlery, established in 1901 in Sakai, Osaka. One of the oldest knife makers in the region, now in its fourth generation. Over 120 years of refining a single craft.

The Boko Gyuto is built around VG10 stainless steel -- a steel trusted by professional kitchens worldwide for its edge retention and corrosion resistance. At 210mm it is the versatile length, long enough for serious work, short enough for control. The 2mm spine and 162g weight give it a lean, precise feel in the hand.

The handle is black lacquered oak, octagonal, with a Pakka wood ferrule. The lacquer gives it a quiet, refined look that ages well with use.

Jikko's defining technique is Hatsuke -- their proprietary method of blade finishing that produces exceptional sharpness straight from the workshop.

Hand wash only. Dry immediately. Sharpen on a whetstone.
