Forged by Fujii Hamono Seisakusho in Sakai, Osaka. The same workshop, the same Hontanren hand-forging method as the petit -- scaled up into a full kitchen knife.

The Kiritsuke Santoku is a hybrid. The flat Santoku profile for clean, full-contact cuts combined with the angled Kiritsuke tip for precision work. At 165mm it covers everything from breaking down vegetables to fine detail cuts without switching blades.

Ginsan (Silver #3) stainless steel takes a fine edge, sharpens easily and resists rust -- the performance of carbon steel without the maintenance demands.

The handle is octagonal ebony with a Buffalo Horn ferrule. Ebony is one of the densest hardwoods available -- it does not flex, does not absorb moisture and darkens beautifully with age. At 153g it sits with authority in the hand.

Hand wash only. Dry immediately. Sharpen on a whetstone.
