The Santoku is Japan's most versatile kitchen knife. Flat enough for clean push cuts, tall enough at 50mm to clear your knuckles, light enough at 120g to use without fatigue. At 165mm it is the ideal all-day length -- vegetables, proteins, herbs, everything in between.
VG10 stainless steel holds a refined edge and resists rust without demanding constant attention. Finished using Jikko's Hatsuke method, the blade arrives sharp and stays that way.
Octagonal oak handle with a Pakka wood ferrule. Understated, well balanced, built to last.
Hand wash only. Dry immediately. Sharpen on a whetstone.
