MURATA Kikutora Gyuto
Forged by Murata Hamono, known in Sakai as Kikutora. Founded in 1915, over a century of knife making runs through this workshop, one of the few that has held its ground in Sakai through every shift in the industry.
The Gyuto is Japan's answer to the Western chef's knife, but ground thinner and with more intention behind the geometry. At 240mm it covers everything proteins, vegetables, fine work without switching blades. The stainless steel runs at 59 HRC, sharp enough for professional use, forgiving enough to maintain at home.
The handle is where this knife stands apart. Zelkova is a dense, beautifully grained Japanese hardwood, paired here with a Mahogany ferrule. The octagonal shape locks into your grip and gives you precise control over blade angle. At 165g it sits between light and substantial present in the hand without tiring the wrist.

Hand wash only. Dry immediately. Sharpen on a whetstone.
