Fujii Nickel Damascus 10A Nakiri
Forged by Keiichi Fujii, a third-generation master craftsman in Sakai, Osaka, certified by the Japanese government as a traditional craftsman. Over a century of knife history runs through this workshop. Over 50 years of it through his hands alone.
The blade is multi-layer Nickel Damascus with an AUS10 stainless core. The Suminagashi pattern is not decorative treatment applied after forging. It is the steel itself, revealed through the process. Hard enough to hold a serious edge. Stainless enough not to demand constant attention.
The Nakiri is Japan's dedicated vegetable knife. Flat profile, no tip, full contact with the board on every stroke. At 170mm it handles everything from julienne to breaking down a whole cabbage without the blade rocking away from the cut.
Octagonal rosewood handle. No ferrule. 187g, substantial enough to feel deliberate, light enough to use all day.
Hand wash only. Dry immediately. Sharpen on a whetstone.
