Produced by Yamawaki Hamono, established in Sakai in 1927. Their lineage traces back to Goh Yoshihiro, one of Japan's most revered swordsmiths of the Kamakura period. Nearly a century of knife making built on that foundation.

The Damascus Hit is a striking blade. AUS10 stainless steel core wrapped in layered Damascus, with a tsuchime hammered finish over it -- the pattern is not uniform, not machine-stamped. Every blade comes out slightly different. The 210mm length sits at the most versatile point of the Gyuto range, long enough for serious work, short enough for precise control.

Persimmon-dyed oak handle, octagonal. The dye gives the wood a deep, warm amber tone that deepens further with use. No ferrule -- the handle meets the blade cleanly.

At 154g it is light for a Damascus Gyuto. That weight is intentional -- Yamawaki grinds thin.

Hand wash only. Dry immediately. Sharpen on a whetstone.
