Forged by Murata Hamono, Kikutora -- Sakai's century-old workshop.
The Deba is a specialist. Built for breaking down whole fish -- splitting the head, running through bone, separating fillet from frame. The 7mm spine gives it the weight and authority to do that work cleanly. At 295g it is the heaviest knife in the range, and intentionally so.
Single bevel, right-handed. This is not a general purpose knife and is not suitable for left-handed use.
AUS8 stainless with a Buffalo Horn ferrule and oval handle -- traditional Japanese construction, built for the demands of professional fish preparation.
Hand wash only. Dry immediately. Sharpen on a whetstone -- single bevel sharpening only.
